The world’s most expensive ice cream can be found in Japan for more than $6,000 per serving.
Byakuya, which was created by the Japanese ice cream brand Cellato, costs a whopping 873,400 Japanese yen (approximately $6,305) per serving. The frozen dessert was handed the title of the world’s most expensive ice cream by the Guinness World Records (GWR) on May 18.
It is made with rare white truffles grown in Alba, Italy, that cost about $6,905 per pound. The ice cream also includes Parmigiano Reggiano and sake lees, the residual sediment produced during sake fermentation.
Cellato hired Tadayoshi Yamada, the acclaimed head chef at RiVi in Osaka, to create a fusion of European and Japanese ingredients in the form of ice cream.

“It took us over 1.5 years to develop, with a lot of trials and errors to get the taste right. Achieving a Guinness World Records title made the effort all worth it,” a Cellato representative told GWR.
The desert is available for sale in Japan and can be shipped directly to consumers.
Buyers are instructed to pour in the white truffle as the ice cream softens before mixing it with a handcrafted metal spoon that is included in the package.

Cellato also recommends pairing the ice cream with sake or a French white wine.
